Zucchinis part of the squash family and are a great vegetable for any garden. There’s several different types of squash to choose from. There are different colors and shapes of the actual fruit, but you can also find ones that are meant to not trail as much and simply stay more bushy.

My favorites to eat are the green and yellow varieties of the summer squash. They are so yummy and there are many ways to cook them and enjoy them.

Dukes are very low in fat and high in vitamin C. I like to sauté them and throw into my eggs in the morning. They’re easy to grill, but my all time favorite is sautéing with some other green veggies like broccoli and adding some garlic and parmesean. You can also grate them and throw into pancakes or cookies if you need to trick your kids (or yourself) into eating more veggies, and zucchini bread is always a good route when you have a ton of it. You can even eat the blooms!
