Another one of my favorite things to grow in the garden is spaghetti squash. It’s so yummy and there’s so many options for meals.

Spaghetti squash has no fat, has low saturated fat, low cholesterol, and a good source of vitamin B6, potassium, manganese, dietary fiber and vitamin C. What calories you do get from this squash, is from the natural occurring sugars. There’s about 4g of sugar in 1 cup of squash.

There are a couple different ways to prepare this. Which ever way you choose, you’ll need to cut it in have from top to bottom. Scarape out the seeds and stringy middle. You can put it in the oven for 30-45 minutes on 350 degrees F cut side down on a cookie sheet. The other option is to put the cut side down in a pan with some water covering half of it and boil it for about 30 minutes. I prefer to boil it.

When it’s done. Scrape out the everything off the skin. It’s like angel hair pasta. After that, you can pick whatever meal you feel like eating. You can throw some red sauce on it, or maybe you want to do an Alfredo sauce. I’ve even let it cool and make a pasta salad. The possibilities are endless!
